This stomach-filling, mildly spicy, and
crispy Parsi style Prawn cutlet tastes irresistibly delicious. The combination
of potato and prawns gives a crispy yet soft texture to the cutlets. This was
my first attempt at Parsi cuisine which turned out winning. Served it with
homemade Pav (Bread). I tried making a fusion out of Goan Pav and Parsi Prawn
Cutlet served with Chilly garlic sauce.
Ingredients
2
medium-size boiled potatoes
6
cleaned and deveined medium-size Prawns
½ tsp
turmeric powder
1 tsp
garam masala powder (Indian mixed spice powder)
1 small
red onion finely chopped
2
cloves of Garlic minced
Handful
coriander finely chopped
1 slice
of bread or 1/2 Pav or bread
2 tspn
Semolina
1 tspn
Bread crumbs
Oil for
frying
Salt to
taste
Procedure
In a
clean deep vessel take thoroughly washed and cleaned prawns chopped into
pieces.
Add
mashed potatoes to it.
Add
turmeric powder, garam masala powder, finely chopped Red onion, minced garlic,
bread crumbs, and mix it well.
Now
soak ½ bread approximately 1 slice bread in a bowl of water and squeeze the
water from it. Add this wet bread to the cutlet mixture.
Add-in
a dash of salt. Finally, fresh coriander without which any recipe is incomplete.
Wet
your hands lightly and shape the mix into cutlets. Coat them with semolina.
Heat
oil in a flat pan. Shallow fry the shaped cutlets on medium-high heat till
golden brown on both sides not more than a couple of minutes on each side.
Munch
on with the dip of your choice or with Pav making it Cutlet Pav...Just as I
did...
