Diwali is a festival of lights in general but for us Goans, it all begins with the making of Narkasur that starts soon after the Ganesh Chaturthi festival. On the day of Narakachaturdashi, we have the procession of Narkasur (demon statues made by a group of youngsters )which forms the part of contests especially organized at various locations in Goa. Kids go from house to house in their vicinity to collect donations for making the Narkasur.
After the contest, that
early morning Narkasur is burnt and the victory of good over evil is celebrated
by bathing with Utney and a bar of new
soap. We relate to Moti Soap as Diwali soap since childhood :)
Dressing up in brand
new clothing, jewelry is so much fun. Ladies in the house conduct ovalni (the
ritual act of waving a small lighted oil lamp in a circle in front of someone.)
and all the men gift something in return to her. Thereafter all the family
jointly visits the temple and seek blessings of the almighty.
A platter of Fov or
Poha or flattened rice is served to the family are prepared namely Batat Fov,
Rosaltey fov, Doodhatle fov, Takatley Fov, Kalaeelle fov, chana Usali, Banana
Halva,amadyachi Karam, and Khajoor.
Every year we try out
something new along with the authentic festive food hence prepared these
Pineapple Coconut ladoos which turned out delicious on the festive occasion.

Ingredients
1 cups
Pineapple
1 cup
Desiccated Coconut
1 cup
Milk Powder
3/4 cup
Caster Sugar
1 tbsp
Pure Ghee
1/4 tsp
Cardamom Powder (Elaichi)
2 tsp
Mixed nuts for garnish.
Procedure
In a
mixer, grind the pineapple chunks into a paste.
Heat
pure ghee in a non-stick pan on low heat, add pineapple puree, and fry for a minute or till a bit cooked.
Add
desiccated coconut and sugar, mix well. Cook this mixture for about 2 minutes
on low heat.
Add
milk powder, cardamom powder, dry fruits and stir well.
When
the mixture starts getting thick, transfer into a bowl, and cool. Once the
mixture is cooled till warm and ok to handle, make small balls of the mixture
into ladoo shape with greased hands.
Serve
the ladoos as an innovative festive sweet.
