Whole wheat cookies

  


Whole wheat Cookies are a lovely treat for all in the family. Why not give it a try this Christmas. 

 

Here is the recipe.

 

Ingredients

 

2 cup whole wheat flour

1/4th tspn green cardamom powder

100 gm chilled cold salted butter

½ tsp baking powder

2-3 tbsp milk

3 tbsp curd

½ cup brown sugar or powdered raw sugar

 

Cookie Icing/Frosting

1/2 cup powdered sugar, sifted

1 tbsp milk

1 tbsp light Corn syrup 

3-4 drops vanilla extract

Gel food coloring 

 

Procedure

 

In a mixing bowl, take the whole wheat flour and baking powder. Mix well.

 

Add chilled butter cubes to it. Break the butter cubes with your fingertips and mix them with the flour. Do not mash it completely but mix until it gets a bread crumb texture.

 

Add brown sugar, green cardamom powder, curd, and milk.

Lightly mix it and gather the entire mixture into a dough.

Do not knead.

Keep the cookie dough covered in a cling wrap in the fridge for 15-20 min.

 

Now after refrigerating the dough, remove it out. Spread some flour on the kitchen worktop and sprinkle over the dough as well.

 

Roll the dough to a thickness of 0.50 to 0.75cms using a rolling pin.

 

Cut it into desired shapes.

 

Transfer the cookies to a baking sheet spread on a baking tray. Bake it at 180 degrees Celsius for 20-25 min till the cookies turn light golden brown.

 

Once done remove the cookies from the oven and transfer them to a wired rack and let them cool for 15-20 minutes.

 

Once completely cooled can ice them with cookie icing as mentioned below.

 

Beat powdered sugar, vanilla extract, light corn syrup, and milk in a small bowl until smooth.

Add milk a little at a time to reach the desired consistency.

Stir in food coloring to reach the desired color. Decorate cookies and allow icing to set.

 

Serve the cookies with milk, tea, or just as a snack.
